Avocado and Shaved Brussel Sprouts Salad

Get creative and use roasted, shaved Brussels sprouts for your next salad base! Mixed with craisins, apple, pumpkin seeds, white cheddar and drizzled with balsamic glaze, this salad is full of flavor! Eat as a salad or serve it with crostinis!

INGREDIENTS

  • 16 c. Brussel sprouts, shaved, roasted
  • 2 ea. Avocados From Mexico, cubed
  • 2 c. Cheese, white cheddar, shaved
  • 1 c. Apple, diced
  • 1 c. Cranberries, diced
  • 1/2 c. Sunflower seeds
  • 1 T. Lemon juice
  • To taste Balsamic glaze
  • To taste Salt and pepper

INSTRUCTIONS

  1. In a medium bowl, combine Brussels sprouts, avocados, cheese, apple, cranberries, sunflower seeds and lemon juice. Toss until well combined.
  2. Evenly drizzle with balsamic glaze.
