Once you’ve prepared your Big Game guacamole, be sure to pat the surface down so it is flat, pour a thin layer of water or lemon/lime juice over the top to form a barrier with the air, and cover the dish with cling wrap, making sure it is flush with the guacamole to prevent air pockets.
