Ingredients
- 1 lb. Ground beef, lean
- 1 ea Taco seasoning packet
- 2 c. Iceberg lettuce, shredded
- 1 can Black beans, drained, cooked
- 2 c. Corn kernels, roasted
- 1 ea English cucumber, sliced into half-moons
- 2 + 1/2 c. Ground beef, taco seasoning, cooked
- 1 c. Cheddar cheese, shredded
- 3 c. Traditional Guacamole
- 1 c. Roma tomato, small, diced
- 1/3 c. Black olives, sliced, drained
- 1/3 c. Red onion, small, diced
- 1 ea Black gel icing pen
- 8 ea Corn crackers, Nabisco, Good Thins
- Traditional Guacamole
- 4 ea Avocados from Mexico, whole, 48ct
- 2 T. Lime juice
- 1/2 t. Kosher salt
- 3 T. White onion, fine chopped
- 2 T. Jalapeño pepper, no seeds, fine chopped
- 2 T. Cilantro, fine chopped
Instructions
Traditional Guacamole
- Remove stem from avocado.
- Cut avocado in half from top to bottom.
- Twist one half of the avocado to pull two halves apart.
- Remove pit from avocado.
- Scoop out the pulp from the avocado and place into a large bowl.
- In a large bowl, gently mash the avocados with lime juice and salt.
- Gently fold in onions, jalapeño peppers, and cilantro.
- Transfer guacamole to a clean serving dish.
- Garnish with cilantro or favorite topping
- Serve as needed.
Haunted Graveyard Taco Salad Dip
- Brown ground beef in a large nonstick pan.
- Add water and taco seasoning and cook and stir for 1-2 minutes. Let cool.
- In a 3-qt. glass bowl or decorative trifle dish, layer the iceberg lettuce, beans, corn, and cucumber.
- Spread the cooled taco meat on top of the cucumbers
- Top ground beef with chipotle ranch.
- Sprinkle cheese on top of chipotle ranch.
- Spread Traditional Guacamole over entire dish.
- Place tomatoes, black olives, and red onions evenly over guacamole.
- Using black gel pen, write RIP on each corn cracker.
- Standing upright, place corn crackers into guacamole to look like a graveyard.
- Serve right away or chill in the refrigerator until ready to serve.
