- 1 EA French onion bread roll, toasted, bottom
- 1 1/2 oz Avocado Honey Mustard Dressing
- 1 EA Crispy Southern Fried Chicken Breast, 6 oz
- 2 EA Black forest ham, sliced thin, prepared
- 1 EA Swiss cheese, sliced
- 2 oz Yellow onions, caramelized
- 3 EA Dill Pickled Avocado
- 1 oz Honey, warm, prepared
- 1 1/2 oz Avocado Honey Mustard Dressing
- 1 EA French onion bread roll, toasted, top
- Fried Chicken Breading
- 40 oz White all-purpose flour
- 8 oz Corn starch
- 5 oz Onion seasoning powder
- 5 oz Garlic seasoning powder
- 2 oz Ranch seasoning packet
- 1 oz Black pepper, course, grind
- 32 oz Butter milk
- 5 oz Cholula sauce, bottled
- 8 EA Chicken breast filet, 6 oz
- Avocado Honey Mustard Dressing
- 16 oz Honey mustard dressing, Kens, prepared
- 1 EA Avocados From Mexico, whole, fresh
- Dill Pickled Avocado
- 16 oz volume Dill pickles, prepared, juice only
- 8 oz Avocados From Mexico, fresh, sliced .25 in, widthwise
Instructions
- Dill Pickled Avocados
- Pour dill pickle juice from the jar into a container, placing the sliced avocados into the dill pickle juice.
- Allow to marinate for at least 3 hours before use. Do not drain.
- Place plastic wrap on top of dill pickled avocados and press down firmly. Cover with lid and store as per HACCP. Serve as needed.
- Avocado Honey Mustard Dressing
- Place all components into a food processor and process until smooth.
- Until processed, pour dressing into a clean container.
- Place plastic wrap on top of dressing, pressing down firmly to prevent oxidization. Place lid on top of the plastic wrap to seal.
- Refrigerate until needed for up to 24 hours. Serve as needed.
- Fried Chicken Breading
- Pre heat deep fryer to 375°.
- Place flour, corn starch, onion and garlic powder, ranch seasoning, and pepper into a mixing bowl. Mix all dry ingredients together and set aside.
- In a separate bowl, add butter milk and Cholula sauce together and mix until well combined. Set wet mixture aside.
- Dredge chicken breast into dry mixture to well coat all the chicken. Dip the dredged chicken into the wet mixture until well coasted. Shake off any excess.
- Place the chicken breast back into the dry mixture to form breading.
- Place breaded chicken breast into the pre-heated deep fryer. Cook until golden brown and internal temperature has reached 165°. Serve as needed.
- Crispy Cordon Bleu & Avocado Sandwich
- Place French onion roll onto a clean work surface.
- Spread avocado honey mustard dressing across bottom bun.
- Place fried chicken breast, ham, swiss cheese, caramelized onions, and avocado pickles on top. Drizzle with warm honey.
- Spread avocado honey mustard dressing across top bun. Place on top of sandwich to close and serve as needed.
