Avocado Shrimp Salad

When you’re craving avocados, this recipe’s got you. It’s made with fresh Avocados From Mexico, so you know it’s gonna be goooood. Oh, and don’t forget to bookmark this recipe, because once you try it, you’ll be back for more.

INGREDIENTS

  • Shrimp
  • 1 lb. Shrimp, small, deveined and peeled
  • 1 T. Avocado oil
  • 1/2 t. Crushed red pepper
  • 1/2 t. Paprika
  • 1/2 t. Garlic powder
  • Salt, to taste
  • Salad
  • 1 lb. Shrimp, cooked
  • 16 c. Romaine lettuce, chopped
  • 2 ea. Avocados From Mexico
  • 2 c. Cherry tomatoes, halved
  • 2 c. Corn
  • 2 c. Cucumber, quartered
  • 1 c. Red onions, thinly sliced
  • Avocado Vinaigrette
  • 1/2 ea. Avocados From Mexico
  • 3 T. Avocado oil
  • 2 T. White balsamic vinegar
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a medium skillet on medium heat, warm avocado oil and add shrimp, crushed red pepper, paprika, garlic powder and salt to taste. Cook for approximately 10 minutes or until the shrimp are golden while stirring constantly.
  2. In a food processer, add the avocado, avocado oil and white balsamic vinegar. Food process until smooth.
  3. In a medium bowl, add lettuce and avocado vinaigrette and toss until well combined.
  4. Evenly distribute salad mixture into four bowls. Topping the salad in rows, add cucumber, corn, shrimp, avocado, onion, and tomatoes.
